History of NURF: the summary
Real Food at NU was founded in Spring 2014 by a group of NU students, led by Colleen Fitzgerrell and Miranda Cawley, in the hope of bringing healthier and tastier food to campus and contributing to a systematic change in our current food system toward more environmental sustainability and social justice.
After more than a year of gathering community support and meeting with administrators, members from NURF obtained official institutional commitment from President Morton Schapiro, stating that NU will source at least 20% Real Food by 2020!
In the 2018-2019 school year, NURF worked with Compass to implement compost bins in the ground floor of Norris, for which they received a Wildcat Excellence Award for Outstanding Campus Initiative in recognition. NURF also hosts cooking events (both fun and educational) for the broader Northwestern community, and in winter 2020 celebrated a week long Real Food Fest.
NURF is currently working on next steps for post-2020 campus commitment as the original RFC commitment comes to an end, and planning to implement student voices in robust, Northwestern-specific standards.
